How long will my seafood stay fresh in the bag once I have purchased it?

We strongly suggest that when you get your fresh seafood home, that you take it out of the plastic bags and place in a container with ice in the fridge straight away. When seafood is kept in plastic for long periods of time (longer than a day), the seafood will start to sweat and can cause it to prematurely go sour.  We recommend that if have your seafood in the fridge with ice that you will be able to get 3 days of freshness out of the product.

What is the best way of transporting fresh seafood?

At Samies girl we have poly boxes readily available that we can put your fresh seafood with ice inside, especially if you are travelling longer than a half hour to your destination.  Otherwise we do sell cooler bags, which are perfect to keep in your car at all times, for your chiller food needs.  We also encourage you to bring your own eskies, and we will supply the ice for FREE.

How do I know if my fish is cooked?

When baking, shallow frying or grilling fish, it is easiest to see when the fish is cooked by pressing down on the flesh with a fork or knife and see if it gently flakes.  If the flesh is too firm, it may need a minute longer.  Generally fresh fillets only take 2-3 minutes each side to cook, and a whole fish is 25-30 minutes per kg.

How do I kill a live mudcrab?

The best way to put a mudcrab to sleep is to place it in the freezer for approximately 1 - 2 hours.  This will kill the crab humanely and will alleviate the claws from being thrown during the cooking process.

How long do I cook a crab for?

Golden rule is 18 minutes per kg, from boiling point.  That means put your dead crab in the boiling salty water.  You will need to salt the water, to keep that fresh seafood  taste.    Otherwise you can steam the green crabs for approximately 15-20 minutes.

How do I peel a prawn?

Remove the head first.  Then grabbing the legs from the middle section pull the shell away.  Then grabbing onto the end of the tail pull that piece away too.  You can devein the prawn also, which is the 'poo bag' on the top of the arched piece of the meat.  Most prawns are quite clean however, and you can gladly eat that if you wish.

Do you take orders for Christmas?

Samie's Girl has been supplying seafood for it's clients for over 20 years.  We have discovered the best way to handle the busy Christmas rush during the 23rd and 24th of December is NOT to take orders (except for 10kg plus Bulk Item Orders), but to keep the shop opened.  That is right, we keep our doors open from 6AM on the 23rd, right through until 6pm on the 24th, that is all day - all night - then all day again.  This way everybody gets a chance to purchase the best and freshest seafood around, anytime.  We do suggest that if you desire specialty items like lobsters, mudcrabs, sandcrabs and bugs that you visit us on the 23rd as seafood stocks are limited during this period, and we simply cannot take orders due to the high demands.  From the feedback we have received over the years, the customers love this system, and it works, so we'll see you then.
